Unlike an à la carte menu, Gia presents a Tasting Menu featuring over 10 pre-set courses. The menu changes every three months to align with seasonal ingredients, ensuring no dish is repeated. The dishes are inspired by family meals from different regions in Vietnam, which is also the origin of the restaurant's name (“Gia” is short for “gia dinh”, “family” in Vietnamese).
Before the meal, the staff shares a short story that the chef wishes to convey through the dish and guides how to enjoy the fullest flavor experience. Tam Vi's menu consists entirely of traditional Vietnamese dishes, including simple ones like fried eggs, boiled morning glory, and roasted peanuts. According to the chef, experiencing a restaurant near a traditional market allows people to have an authentic experience, encountering vegetable and meat vendors, rather than being in a luxurious hotel but isolated from everyday life. Despite its modest exterior, the restaurant has garnered numerous prestigious awards in less than eight years since opening.
The dishes at the restaurant are typically Vietnamese cuisine or international dishes prepared with Vietnamese influences. The “Saigon Tasting Menu” showcases a modern interpretation of classic Vietnamese dishes such as Le Petite Banh Mi, Bun Cha Bourdain and Hanoi Turmeric Fish. In addition, a full à la carte menu features signature dishes such as Banh Xeo Taco, Da Lat Street Style Pizza, Mekong Delta Fish, Saigon Broken Rice and Fish Sauce Ice Cream.

Under Chef Peter's direction, ordinary dishes found in the market outside transform into their more luxurious versions.
