As a new city in the Michelin Guide Vietnam 2024, Da Nang represents the cuisine of Central Vietnam while reflecting influences from French, Chinese, and Southeast Asian culinary traditions. Dishes in this coastal city leave a lasting impression with their fresh ingredients rather than complex preparation methods, according to the Michelin Guide.

Among 164 restaurants, 7 establishments have been awarded one Michelin star. Additionally, 58 venues received the Bib Gourmand distinction, and 99 addresses were selected for the Michelin Selected list. This year's list includes both newcomers and returning winners from last year. Asia King Travel would like to introduce you to these special restaurants.

7 Must-tries Michelin Star Restaurants

Michelin stars are awarded to restaurants judged to be of particularly high standards. Qualifying establishments can receive one, two, or three stars. Chefs around the world are coveting this award for their whole careers. The evaluation criteria are the same for every restaurant, focusing on the quality of ingredients, cooking techniques, and most importantly, flavor.

The Michelin star system first appeared in 1926, with a single star denoting "a very good restaurant." The second and third stars were added in 1933, with two stars meaning "excellent cooking worth a detour" and three stars meaning "exceptional cuisine worth a special journey."

According to the organizers, the one-Michelin-star restaurants announced last year: Gia, Hibana by Koki, Tam Vi, and Anan Saigon have retained their titles. Additionally, the 2024 one-Michelin-star list welcomes two new additions: Akuna and La Maison 1888. The Royal Pavilion has been promoted from the Michelin Selected list to one Michelin star.

Michelin Selected and Michelin Green Star

Michelin Selected comprises restaurants with delicious food recommended by the Michelin Guide. They fulfill all five criteria: quality of food, mastery of technique, harmony of flavors, the chef's personality, and consistency over time. This is considered a preliminary list for the Michelin Star Award.

However, a touch of innovation is needed to earn a Michelin star. When inspectors visit a restaurant and assess it as meeting the qualifications, it will be awarded a Michelin star, as in the case of The Royal Pavilion.

Notably, for the first time, a restaurant in Vietnam has been awarded the Michelin Green Star: Nén Danang. This award honors establishments pioneers in building sustainable gastronomy, providing an experience combining culinary excellence with a serious commitment to environmental friendliness.

Nén Danang regularly shares information about their farm on social media and encourages diners to support a greener and more sustainable future. The restaurant even takes a bold step by collaborating with local schools, sharing information with the younger generation to spread awareness of the "green" concept.

Bib Gourmand Award for “Good Quality, Good Value” Cooking

The symbol of the Bib Gourmand Award is the Michelin Man, Bibendum. Bib Gourmand restaurants are for those who want to enjoy a delicious meal at an affordable price without sacrificing quality or taste. The award originated from Michelin recommending good eateries to long-distance drivers.

Michelin has announced a list of 58 restaurants, comprising 18 representatives from Hanoi, 16 from Da Nang, and 24 from Ho Chi Minh City. These 58 restaurants have been honored by the Michelin Guide for their "good quality food at moderate prices," as assessed by Michelin inspectors.

The award-winning eateries don’t have overly elaborate dishes, even simple and everyday. They are dishes you can easily find on the streets of Vietnam, like pho, rice noodles, egg noodles, fried rice, etc., but with flavors that will make you remember them forever.

Last year, Vietnam had 29 restaurants receiving this award. This year, the number of Bib Gourmand awardees has doubled. The award signifies that you don't need fancy embellishments, just cook delicious food, and the world will know you.

Vietnamese Cuisine - A Great Representative for Bib Gourmand Award

According to Mr. Gwendal Poullennec, International Director of the Michelin Guide: Whether classic or modern, traditional or innovative, the eateries that our anonymous inspectors love to discover and select for the Bib Gourmand list will be a guarantee for diners to enjoy authentic culinary experiences at affordable and attractive prices.

These restaurants will also allow diners to explore the life of Hanoi, Da Nang, and Ho Chi Minh City through one of these cities’ most important "assets".

He also concluded, "With 13 new establishments receiving Bib Gourmand awards in Hanoi and Ho Chi Minh City this year, our 2024 selection is an invitation to diners to discover the charm, quality, and endless diversity of Vietnamese cuisine."

The three cities of Vietnam each possess their distinct culinary colors. Vietnamese culinary culture is full of energy and is on the rise. Vietnamese dishes are reaching international audiences, yet they retain their simplicity through the humble, local ingredients used.

Conclusion

Despite being only the second year this award has been held in Vietnam, hundreds of restaurants and eateries have already impressed the Michelin Guide. This demonstrates that Vietnamese cuisine truly is a tourism hotspot waiting to be explored.
